Little things matter. Have you ever thought of that in a profound way? We all know this expression and we all know yes indeed little things matter, but sometimes you encounter a brilliant example that astounds you. Today we are going to make a za’atar dressing pomegranate salad that changes the number of customers and popularity of a little restaurant from being average to being an awesome and highly popular spot to eat.
Imagine yourself wandering streets of unknown town looking for a place to stop for a brunch. The spring finally opened its arms to you and you want to sit outside and enjoy gentle glimpses of the sun on your face. You walk along the line of restaurants making little peaks at peoples plates just to decide where to make a stop. Suddenly you see a girl having her old classic omelet with a sausage but there is a blooming, bursting with rainbow colors piece of art on a side. You think you might stop and check this spot out. I did. I ordered the chicken quesadilla and got the desired salad on a side as a complimentary dish. Everyone does at this restaurant.
Thin pieces of mango sticking out of the bowl like wings of some exotic bird. Green curvy bed of salad covered with juicy marinated pear and red pomegranate seeds. Thinly shaved fennel adding that unexpected zing of flavor and za’atar dressing with its middle eastern notes finishing the story.
This is what makes the difference. That’s what makes passing by people choose this very restaurant for a brunch. Every omelet plate looks almost the same. You put extravagant blooming salad on a side and people get attracted like bees to a flower. I think it is genius. Just little extra love and care makes a huge difference to everything. How about putting a note of love to you husbands lunchbox, or how about adding a little toy to your kid’s lunchbox, or how about smiling to a stranger and making a compliment out of the blue just for the sake of making somebody’s day. I do believe that this is an important skill that we need to train because we never know how much that little extra effort on our side might change somebody’s day from being average to being awesome.

Ingredients
- 3 cups any salad
- 1/2 bulb fennel
- 1 pear (apple good too)
- 1 mango
Za'atar dressing ingredients list #1
- 1 tbsp pomegranate syrup (or use pomegranate juice for dressing)
- 1/2 lemon lemon juice
- 2 tbsp extra virgin olive oil
- 1 pinch salt
- 1 pinch pepper
- 1 tbsp za'atar spice
Za'atar dressing ingredients list #2
- 1/2 pomegranate pomegranate juice
- 1/2 lemon lemon juice
- 1 tbsp honey
- 2 tbsp extra virgin olive oil
- 1 pinch salt
- 1 pinch pepper
Instructions
- Prepare your ingredients
- Prepare the Za'atar dressing. If you are using Ingredients from Za'atar Dressing #1, combine pomegranate syrup with lemon juice, olive oil, salt, and pepper. If you are using Ingredients from Za'atar Dressing #2, combine pomegranate juice with honey, lemon juice, olive oil, salt, and pepper. Whisk the dressing and set aside. Wash and spin your salad, arrange into separate bowls for each person.
- Slice mango (skin on) into a beautiful half dome shape (slice down the pit first and then slice horizontally). Chop pear and julienne fennel.
- Arrange mango alongside the perimeter of the bowl letting the pieces to stick out. Cover salad leaves with pieces of pear, fennel and pomegranate seeds. Pour the dressing over and sprinkle with za'atar spice. Serve immediately. Bon Appétit!
