Hello everyone, with joy and sunshine to spare everyone agrees that summer is the time to get rest, have fun, slow down and meet with friends sharing some great food bursting with fresh flavors of seasonal fruits and vegetables. All-time favorite summer fruit is watermelon! How do you like to eat it? Cut in neat cubes with a fork or immersing your head in a huge wedge making sure your face is all being covered in delicious sweet watermelon juice dripping down your face? When I was a child, I preferred the second variant, because whatever chemistry is behind that method it tastes the best like that. I’m a grown-up now and can’t afford the luxury of watermelon juice dripping down my cheeks so I want to suggest a classy watermelon slushy for a friend’s party that has a zing twist of pickled ginger incorporated in it. Fresh mint adds another twist to the flavor, it’s impossible not to fall in love with this refreshing watermelon sorbet.
Yes, by the way, I still eat watermelon the first described method when no one is watching, because I do believe that we adults still own the luxury of doing what we want, and we gain more and more experience over the years to be creative about it.

How do you make a slushy?
Watermelon slushy ice cream recipe:
- All you have to do is to cut and freeze watermelon overnight in a freezer (8 hours of freezing is minimum in case you forget to do that a day before)
2. Put frozen watermelon in a blender or food processor and add candied ginger and few leaves of fresh mint (don’t forget to set aside few leaves for decoration)
3. Pulse to reach desired consistency. Do not over blend otherwise, you will have a watermelon smoothie instead. (which is also not a bad idea at all)
Watermelon Slushy, Ice Cream, or Sorbet?
The main difference is ingredient list/ Ice cream usually is made of dairy products that are no go for our plant-based website. Sorbet is made of frozen fruits and juices that result in the ice texture of the final product.
Slushy is something in the middle between sorbet and smoothie texture-wise. Whether to make it slushier or smoother is up to you!
Watermelon is a surprisingly healthy fruit. It has high water content and delivers many other important nutrients, including lycopene and vitamin C. These nutrients mean that watermelon isn’t only a tasty low-calorie treat but also very good for your health.
