Spicy red lentil soup
Ingredients
- 1 onion
- 1 carrot
- 2 celery sticks
- 1 cup red lentils
- 4 cups water
- 1/2 lemon juiced
- 1 tsp. ground coriander
- 1 tsp. smoked paprika
- 1/2 tsp. ground cumin
- 1/2 tsp. salt (optional)
- 1/2 tsp ground black pepper (optional)
- 2 tbsp olive oil
Instructions
- Prepare your ingredients
- Peel and dice onions and carrots, wash and dice celery sticks. Fry onions on a medium heat for 8 min or until translucent, add carrots, celery fry for 2 more minutes
- Add lentils, water, spices and bring to boil. When the soup starts boiling reduce heat to simmer, stir everything thoroughly, cover with a lid and cook for 25 min. When ready take off the stow and puree with puree mixer attachment to reach smooth and silky texture.
- Add lemon juice and mix well. Serve hot. Bon Appétit!
