Here you go, my friends! Fennel celery citrus salad that has a unique flavor and is very sophisticated.
Think thin, transparent ribbons of fennel and celery covered with juicy pieces of orange, scattered with refreshing mint and drizzled with citrus vinaigrette. This salad complements any seafood, pasta dish or any eggplant recipes. It takes a couple of minutes to put it together and it is one of those easiest recipes to wow your crowd.

Ingredients
- 2 fennel
- 2 oranges
- 1/2 bunch mint
- 4 celery stalks
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1/2 lemon

- Shave fennel into thin ribbons using mandoline or food processor. Thinly slice celery stalks. Segment orange cutting it in half horizontally, follow the white lines with your knife and gently twist the knife out to remove each segment. Chop mint. Squeeze the juice out of lemon and remaining orange halves. Add olive oil to the citrus juice and mix well in a shaker or any glass container with a cup.
- Arrange fennel and celery ribbons on a big preserving plate, scatter with mint leaves and orange pieces. Add citrus dressing, mix gently to cover vegetables evenly add salt and pepper, cover with plastic and put in a fridge for 1 hour to let veggies marinate. Bon Appétit!
