I am a huge chocolate lover and when it comes to lent somewhere in the middle of it I feel a huge desire for all things chocolate, and chocolate chia pudding is exactly what I need when I have no time (it takes 15 seconds to fix it), want to eat healthily and can satisfy my chocolate craving!
Honestly! What kind of dessert one can make within 15 seconds? Chocolate pudding with chia seeds! Here is the recipe! Put 4 tbsp. of chia seed in a jar, add 2 tbsp. of cocoa, add 1 can of coconut cream, pinch of salt (important!) mix and put in a fridge overnight! I personally do not add any sweetener at this stage because it tastes better when you add it when you serve your dessert. When ready to serve, add berries of your choice and top with 1 tbsp. of honey or maple syrup and dig in! This recipe yields two portions of chocolate chia pudding with coconut cream and each portion contains 20 gr of fiber plus the fruits that you are going to top your dessert with!

Here is a cool lifehack: in vegan baking, chia seeds can replace eggs. To use them as an egg substitute in baking, try mixing 1 tablespoon of chia seeds with 3 tablespoons of water, then let them sit for a few minutes. A gel will form that can be used instead of eggs in baking.
